The Italian Wine Scholar education program is an Italian wine course designed to provide committed students of wine with the most advanced and comprehensive specialization study program on Italian wine bar none! It was created by the Wine Scholar Guild with the support of the Italian wine DOC/G consortia.
The Unit 1 course is divided into nine 2-hours lessons (plus a one-hour exam), focusing on the wines of Northern Italy and includes 4-6 wine tasting for every lesson.
Starting in November 2026, the Italian Wine Scholar Unit 1 curriculum at Caplan Wine Academy has been completely redesigned!
Italian wine is one of the world’s richest and most diverse wine cultures, but this diversity can also make it one of the most challenging to study. Rather than approaching the subject region by region, where students may encounter dramatically different wine styles within the same lesson, our course has been reorganized around clear learning themes.
Each session focuses on a specific style of wine, a grape variety, or a unifying concept, allowing students to explore related appellations together and build knowledge progressively. Instead of constantly switching between white wines, red wines, sparkling wines, and sweet wines, each lesson follows a logical narrative that makes the material easier to understand, remember, and apply.
The new curriculum has been reorganized by Ettore Donadeo DipWSET, Italian Wine Scholar, Vinitaly Italian Wine Expert, and 2022 Italian Wine Scholar Educator of the Year, with the aim of creating a more cohesive and intuitive learning journey, while covering all the knowledge required for the Italian Wine Scholar certification.
Each Unit (Unit 1 and Unit 2) has a separate exam. To become an Italian Wine Scholar you need to sit both the exam for Unit 1 and the exam for Unit 2.
Candidates need a composite score of 75% to receive the IWS credential, i.e. the scores from both exams are added together and averaged for final assessment.

Curriculum <Unit 1>

<The Physical and Regulatory Foundation>
The first session introduces the foundations of Italian wine, covering its history, climate, geography, topography, and wine legislation. It also provides an overview of Northern Italy, the focus of this unit, setting the stage for the regions explored in the following lessons.

<Valle d’Aosta & Alto Adige: the Alpine frontier>
This session will guide the students through the cold regions of the far north. Both Valle d’Aosta and Alto Adige are heavily influenced by Italy foreign neighbours (respectively France and Alto Adige) and they share common points and profound differences.

<The Nebbiolo Masterclass>
This noble grape variety is so important to be worth an entire session: not only we will see its characteristics, but we will also travel through Piemonte and Lombardia to see the appellations which the students need to know to pass the exam.

<The Vibrant Red Tradition of Piemonte and Trentino>
In this session we start moving from where we had left in the previous one: we complete our look of Piemonte reds (Barbera, Dolcetto and many others) and then we go through the reds Trentino, which can reserve some interesting surprises.

<The White Wine Renaissance>
While arguably more famous for its red wines, Italy also makes excellent whites: its white wine revolution started in Friuli Venezia Giulia, which will kick off the lesson, but we will also explore the whites of Piemonte and Trentino.

<Volcanic Terroirs and Saline Whites>
In this lesson we keep looking at dry still whites, focusing on some key varieties and regions: Liguria and Veneto.
<The general appellations of Northern Italy>
At the end we will give a brief outlook to the more flexible appellations of Northern Italy, like Delle Venezie DOC and Friuli DOC.

<The charming reds: Rossese, Lambrusco, Bardolino & friends>
This session covers the lighter reds of Liguria, Emilia-Romagna (Lambrusco included), and Veneto. We will also touch upon the reds of Friuli Venezia Giulia, to discover that quality can be found in the wine of any volume.

<The Northern Italian Passito Tradition>
The session is divided in two parts: first we are seeing the passito wines of Northern Italy, from Liguria to Friuli Venezia Giulia.
<The global outlook of Veneto>
In the second part we will acknowledge the long tradition in Veneto of using international grapes and the main appellations doing this.

<Effervescence Metodo Classico vs. Tank Method>
Last, but not least! This session will accompany the students through the main sparkling wines of Northern Italy: Franciacorta, Oltrepò Pavese, TrentoDOC, Asti DOCG, the Prosecco appellations and others.
